At Ishin, every detail reflects a dedication to craft, precision, and restraint. More than a meal, our omakase is an intimate dialogue expressed through the culinary traditions of Japan.
Each course is shaped by the season and prepared with ingredients sourced from the waters of Japan and beyond.

With decades devoted to the art of sushi, Chef Fuyuhiko Ito brings an unwavering commitment to authenticity and excellence.
His philosophy is embodied in the name Ishin. Meaning Ito's Heart, it reflects the soul, intention, and discipline poured into every creation.
Trained in the rigorous traditions of Edomae sushi, Chef Ito transforms the finest seasonal ingredients into moments of quiet artistry.
The rice remembers the hand.
Still warm.
It meets the sea, and breathes.
One blade.
One breath.
The fish gives itself whole.
Green fire, woken on stone,
as it has been woken
a hundred quiet years.
It asks nothing of you.
Only this:
taste it now, in one breath.

“An evening I will not forget. Every course felt like a private conversation with the season.”
“The most precise, quietly confident omakase I have had outside of Tokyo. Chef Ito is a true master.”
“Faultless from the first cut to the last. Intimate, unhurried, and deeply personal.”
Ishin is an intimate omakase experience guided by the rhythm of the season and the vision of Chef Ito.
To preserve the elegance of the Ishin experience, we kindly ask guests to arrive in refined evening attire.
For gentlemen, we recommend a blazer or sport coat paired with a dress shirt, polo, or elevated basic tee. For ladies, we suggest dresses, skirts, or dress pants. Please refrain from wearing ball caps, athleisure, or clothing displaying offensive language.
To preserve the delicate balance of flavors and aromas central to our omakase, we kindly ask guests to refrain from wearing strong fragrances, including perfume, cologne, and heavily scented lotions.
Our menu is thoughtfully composed as a set experience. While we strive to make every guest feel welcome, we are unable to accommodate certain dietary restrictions, including gluten-free, seafood-free, vegetarian, and vegan diets.
To preserve the pacing and integrity of the omakase experience, we kindly ask guests to arrive promptly for their reservation. Due to the sequential nature of the menu, late arrivals may result in missed courses.
Cancellations made within 48 hours of the reservation, as well as no-shows, will incur the full menu charge per guest.
Our curated beverage program is designed to complement the nuances of the omakase experience. Guests wishing to bring a special bottle may do so for a corkage fee of $75 per 750ml bottle, with a limit of two bottles per reservation.
